Rustic Italian Bread Salad
I love bread salad. Not only is it a great way to make use of bread that is past its prime, it also is a fresh, flavorful and easy meal. It is a terrific option to reduce, reuse and recycle.
- 1 tbsp Olio do Panne
- 1/3 cup good quality extra virgin olive oil (about)
- 1/4 cup balsamic vinegar (about)
- 1 loaf country-style bread (at least day old)
- 1 med Tomato, chopped
- 1 med Cucumber, chopped
- 1 med green bell pepper, chopped
- 1 cup chopped red onion
- 1/3 cup crumbled feta cheese (optional)
- 1 cups chopped beef, turkey or ham (optional)
- 1/2 cup greek olives (optional)
In a jar combine oil, vinegar and olio do panne. Cover and shake vigorously. Pull apart or chop the bread into bite-size pieces and toast. In a salad bowl, combine tomatoes, cucumbers, onions and beef, turkey or ham. Shake vinaigrette again and fold into salad. Let sit to marinate for at least 1 hour. When ready to serve, add the bread, feta, and toss.
