Game Marinade
Game is know for strong flavor and tough texture.  To make the most of any game this simple marinade is what you need.  Your fish, fowl and meat will melt in your mouth after a night in this recipe.


Combine ingredients in a glass dish. Add cuts of your favorite game and coat with marinade. Marinate overnight. Bake, Broil or grill.

Pekarski's Smoked Cornish Game Hen

image from www.myrecipes.com Juicy, tender and full of fabulous flavor, smoked Cornish game hens are a treat that will leave you looking for more.  Cooking these petite treats is easy.  The recipe below comes from Pekarski Smoked Sausage Company in South Deerfield, MA. 

Preheat oven to 325-350 degrees. In a casserole dish or roasting pan rest smoked hens in 1/2 inch of water.  Bake the hens for 1 hour, adding more water to the pan as it evaporated.  The hens are done when the temperature reaches 145 f.

Each hen makes one meal sized serving.
