Get your Irish Up with Dark Chocolate Irish Whiskey Cake

This is one of the ways I intend to celebrate St Patrick's Day.  Inspired by Boca Negra from Baking with Julia, it is a simple sensation that is sure to set your Irish eyes a smiling.

2 cups Chocolate Drops
1/4 cup Xylitol coffee and chocolate spice
1 cup Irish whisky or The Knot
4 eggs, whipped
1 cup Almond Flour

In a double boiler combine chocolate, rum and xylitol.  Simmer until the chocolate melts.  Take off heat and fold in eggs and flour.  With a spatula or immersion blender, whip until thoroughly combined.

Pour the batter into a parchment lined pie plate.  Fill a roasting pan 1/4 full with water.  Immerse the cake in the water.  Put the pan in a 350f preheated oven.  Bake for 30 minutes.

Serve topped with White Chocolate whiskey cream.
