I love pie.  Sweet, savory, any kind.  Pie says and does it all.  Pull together all of your cravings and make a pie.  This recipe was pulled together from trial and error and a couple tips from America's Test Kitchen.   Where we came to understand that chilled vodka will help your gluten free flours have a glutinous reaction.

Sift the mix into a large bowl. Add the butter and, using a your fingers (or a pastry cutter, if you prefer), cut it into the flour until the mixture looks like coarse crumbs. Hands work the best. Add the vodka, stirring the doughto incorporate it. Turn the dough out onto a work surface and fold it over on itself a few times.  Ideally it will have a few noticeable crumbles of butter. The less perfectly blended the flakier it will be. Refrigerate until ready to use.
