Mango and Spinach Salad with Langostines
I went to the market to get a lemon and ended up with everything but. A shrewd fruit seller saw me coming and I had no chance. After days of eating exotic finds I finally had to get rid of the enormous mango she insisted I needed. I tried to keep telling her it was only me at home and she was having no part of my excuses. So on a crazy hot day I made a savory salad featuring my mango. I also had some langostines, ones I caught eying the mango in the kitchen. What a perfect pair they were.
- 1 large mango, peeled and chopped.
- 1/2 1 small red onion, sliced
- 6 cups spinach, torn in large pieces
- 8 langostines, steamed, shelled and in pieces
- 1/3 cup chopped peanuts
- 1/2 tbsp Vindaloo
- the juice of 1 lemon
- 1/3 cup Peanut Oil
Toss the fruit, vegetables,fish and peanuts in a large bowl, mix in vindaloo. Finish with lemon juice and Peanut Oil. Chill until you are ready to serve.
