French Fridays: St Germain Du Pres Onion Biscuits

The name of this recipe is what intrigued me.  Saint-Germain-des-Prés is an area of the 6th arrondissement of Paris, France, located around the church of the former Abbey of Saint-Germain-des-Prés.

Home to a number of famous cafés, such as Les Deux Magots and Café de Flore, the Saint-Germain-des-Prés area was the center of the existentialist movement (associated with Jean-Paul Sartre and Simone de Beauvoir).

The area is also considered by many to be the birthplace of Paris cafe culture.  Artists settle there, be it painters like Delacroix, Ingres and Manet, writers like Racine, Balzac and Georges Sand or actors like Mounet-Sully. 

They also know how to create amazing food.  Light, yet full of flavor, these biscuits melt in your mouth.  Terrific on your own or ideal when paired with simple sensations like Crab and Grapefruit salad.  Using almond, brown rice, arrowroot flours and earth balance, I was able to make mine gluten and dairy free, yet enjoy the same amazing outcome.
