Ffwd: Crab and Grapefruit Salad
Salad is a staple in my home. The fresh flavors you can create with a few simple ingredients satiate. Add a glass of wine and it can end a day, week and month gracefully. That is what this salad did for me last night. After a long stressful stretch in which a good nights' rest was elusive this was a recipe for relaxation, pure and simple.
I love grapefruit so I chose not to drain the sections and utilized all the juice. I also found it easier to remove the fruit from it's rind much easier with a grapefruit spoon. My shopping list was left on my desk so I made the mistake of picking up avocado rather than orange bell pepper and neglected to pick up scallions. So with the first fresh cut chives of the year, my crab and grapfruit salad with avocado was a rich ode to this terrific dish. Thank you Dorie.

We traded the pepper & scallion for avocado & Chives as well - I really thought the avocado made the perfect bridge between the rest of the ingredients.

I loved the contrast of the tart grapefruit and the creamy, rich avocado in this salad.
