Furthering my foray into rhubarb I have been experimenting with this old recipe of ours.  Definitely a sweet treat, Orange Vanilla Sugar and Shortbread are the perfect foil to the tart tanginess of rhubarb.  If you want to be truly decadent, serve with strawberry ice cream.


Rhubarb Squares

Make shortbread and spread dough in a 9x13 or 2, 8x8 pans.  Bake at 350 degrees F for 12 minutes.

Spoon Rhubarb Curd over warm crust. Sprinkle Sugar over the barsBake at 350 F for 40 minutes or until wooden pick inserted in center comes out clean. Cool on wire rack. Serve warm.

Connie Farris • A friend gave me some rhubarb that is still green. Is it safe to eat? Are there some things that green vs red are better for? I typically have only eaten it stewed or in pie.

I had to look that up. As long as the leaves are curled, green rhubarb is safe to eat. While I could find no specific recipes for green rhubarb I did find one post where green rhubarb was thought to be tastier.
