Easy Spanish Rice

Easy Spanish Rice
I always thought Spanish rice was exotic and far to complicated to make for anything but a special occassion.  What a fool am I.  A trip to Santander in northern Spain educated me on the simplicity of this fortifying dish.  Thank you Elena!

  • 1 cup water
  • 1/2 1 chopped green pepper
  • 1/2 1 chopped red pepper
  • 1/2 1 yellow pepper
  • 1/2 med white onion, chopped
  • 4 stalks celery, sliced
  • 1/2 tsp sea salt
  • 2 large heirloom tomatoes, cut up
  • 1 cup long grain rice
  • 2 1sp Picante Passion

Soak rice in water for 1 hour.  In a medium saucepan combine rice, water, green pepper, onion, celery, and salt. Bring to a boil and then reduce heat. Cover and simmer for 5 min. Stir in undrained tomatoes, rice, and Picante Passion. Cover and simmer about 20 minutes or till rice is tender and liquid is absorbed.
