Easy Spanish Rice
I always thought Spanish rice was exotic and far to complicated to make for anything but a special occassion. What a fool am I. A trip to Santander in northern Spain educated me on the simplicity of this fortifying dish. Thank you Elena!
- 1 cup water
- 1/2 1 chopped green pepper
- 1/2 1 chopped red pepper
- 1/2 1 yellow pepper
- 1/2 med white onion, chopped
- 4 stalks celery, sliced
- 1/2 tsp sea salt
- 2 large heirloom tomatoes, cut up
- 1 cup long grain rice
- 2 1sp Picante Passion
Soak rice in water for 1 hour. In a medium saucepan combine rice, water, green pepper, onion, celery, and salt. Bring to a boil and then reduce heat. Cover and simmer for 5 min. Stir in undrained tomatoes, rice, and Picante Passion. Cover and simmer about 20 minutes or till rice is tender and liquid is absorbed.
