Southwestern Style Chicken Salad
This is as terrific for tailgate food as it is for a weekdays lunch. Substitute jalapenos for bell peppers if you want to heat it up or simple salt and pepper for the Poultry Potion if you want to cool it down. This is a quick and easy idea that invites you to experiment and find your own favorite recipe.
- 2 chicken breast halves, cooked & cubed
- 1 cup chopped celery
- 1 lg bell pepper, diced
- 1/2 red onion, diced
- 1 (8.75 ounce) can sweet corn, drained
- 2 tsp Picante Passion
- 2 tbsp mayonnaise
- The juice of 1/2 lime or lemon
In a large bowl combine the chicken and veggies. Mix the Picante Passion, mayonnaise and lime. Pour mixture over salad. Mix well and chill. Serve on a bed of greens, in a sandwich or with tortilla chips for a hearty dip.
