Mini Quiches, with asparagus and red pepper

- 3 eggs, beaten
- 1/3 cup Soy Cream
- 1 minced green onion
- 1/3 minced red bell pepper
- 4 asparagus spears, sliced
- 1 tbsp Fines Herbs
- 1 tsp chive blossom or sea salt
- 1/2 recipe of Flaky Crust or Galette Dough
Preheat oven to 350 degrees F. Separate the dough into 12 individual balls. Flatten each ball out, then line the bottom and sides of a dozen cups in a standard muffin tin. Beat eggs with cream and add the remaining ingredients. Evenly distribute egg mixture between the cups. Bake in preheated oven for 18 to 20 min, or until filling is set.
