Spicy with a subtle sweetness, this marinade plays to the delicate nature of fish. As wonderful on scallops as it is on salmon, this recipe is simple and sensational at the same time.
- 1/8 cup Picante Passion
- 1 cup olive oil
- 1/4 cup fresh lemon juice
- 1 tsp orange marmalade
- 1 tsp horseradish
In a blender, combine all ingredients. Mix well, but do not puree. Use to marinate fish for at least 1 hour - overnight is better.
