Creamy Italian Dressing
- 2 cups mayonaise or vegan aoli
- 1 scallion, chopped
- 1/2 small carrot, chopped
- 1/3 cup fresh lemon juice
- 1/8 small red pepper, chopped
- 1/2 tbsp Olio do Panne
In a blender, combine mayonnaise, vinegar, vegetables and Olio do Panne. Blend until smooth. Store tightly sealed in the refrigerator for up to 2 weeks.
