I love vegetables and salads. I can find something creative to make every season. Chop salads with kale, root vegetables and apples in winter. New potatoes, chives and dandelion greens in spring. Arugula, romaine and tomatoes in summer. Pumpkin, onion red cabbage in fall. They are just a few of the combinations I have surprised my guests with. This dressing is a go to all year round.
In a blender, combine mayonnaise, vinegar, vegetables and Olio do Panne. Blend until smooth. Store tightly sealed in the refrigerator for up to 2 weeks.
