Chocolate Hazelnut Pan Forte

  • 1 cup sugar
  •  1 cup Chestnut Flour
  • 1 cup chopped hazelnuts
  • 1/2 cup chopped walnuts
  • 1/2 cup coconut
  • 1/2 cup chocolate chips
  • 1 cup dried cherries
  • 1 cup dried cranberries
  • 1 tbs Coffee & Chocolate Spice
  • 2 tsp baking powder
  • 1/4 cup cocoa
  • 1/2 cup canola oil
  • 1/2 cup soy milk
  • 3 eggs

Combine all dry ingredients in a large bowl and mix well. In a separate small bowl beat eggs, canola oil and soy milk. In the large bowl mix both liquid and dry ingredients together until well blended. Pour the mixture into 2 greased pie pans. Cook in a preheated oven at 350 f for 25 minutes or until a cake tester comes out of the mix clean. Slice as you would a pie.

Hmm, this looks great. I think I would use regular milk instead of soy though.

I use soy milk because of it's creaminess. Whole milk works as well. Enjoy!
