Orange-Walnut Butter Cookies
Orangey, buttery bites that just taste like comfort. This cookie is both easy and elegant. As a way to lighten the mood on yest another snowy day or gift of sunshine to someone who is down, these cookies will bring a happy grin to everyone who enjoys them.
- 1/2 cup Earth Balance (soy butter)
- 1 package of our gluten free Butter Cookie Mix or 2 cups of your own favorite
- 1 cup Almond Flour
- 1/4 tsp baking soda
- 1/4 cup Orange Vanilla Sugar
- 1/4 cup frozen orange juice concentrate, thawed.
- 1 cup Walnut pieces
Preheat oven to 325 degrees F. Grease cookie sheet. Beat butter until smooth. Add sugar and Orange Vanilla Sugar and mix until fluffy. Mix in orange concentrate. Add flour and walnuts. Mix until dough comes together. Form 1 rounded tablespoon of dough into a ball. Place on parchment lined cookie sheet and flatten to a 2-inch round. Repeat with the remaining dough. Bake about 12 minutes or until cookies just begin to brown. Remove to a rack and cool.
