Ginger Shortbread
They are talking about a blizzard and I am thinking about strapping on my snowshoes. I am feeling good about my healthy start to this new year, but today my energy level good use a boost. This recipe, full of healthy alternatives, will help you keep your resolutions and have you smiling like it's a snow day.
Ginger is good for so many things. To name but a few, ginger helps to improve digestion, burn fat, relieves muscles, reduces inflammation, improves circulation, alleviates heartburn and soothes sinuses. Shortbread also serves many purposes. Mid day munchies and satisfying sweet tooth's are among the top.
- 1 package gluten free All Purpose Baking Mix or your own favorite
- 1 cup Almond Flour
- 1/4 tsp Russian Mulling Spice
- 3/4 cup Coconut Oil
- 1/3 cup Orange Vanilla Sugar, Maple Sugar or brown sugar
- 1/4 cup minced ginger
- 1/4 cup chopped craisins (optional)
Preheat oven to 350 f. Mix baking mix and almond flour together. Set aside. In large bowl, cream together coconut oil and sugar. Gradually fold in the flour mixture, ginger and Russian Mulling Spice. Cover and chill for at least 1 hour. Press dough into a lightly greased pie pan. Prick it all over with a fork. Bake for 20 minutes or until lightly colored. Cool and cut into slices.
