Coffee Shortbread
When in doubt I make shortbread. It is simple, yet always a show stopper. Variations abound. This is the one I turn to on days that require a hearty bit of comfort.
- 2 cups Almond Flour
- 1/2 cup sugar
- 2 tbsp instant coffee powder
- 1 teaspoon Coffee & Chocolate Spice
- 3/4 cup Earth Balance (soy butter)
- 1/2 cup Chocolate Drops (optional)
In large bowl combine almonds, flour, sugar, coffee and Coffee & Chocolate Spice . Cut in the butter and mix together until well blended. Shape dough into a ball, wrap in foil or plastic and refrigerate for at least half an hour. On parchment lined surface roll chilled dough to about 1/4 inch thickness. Cut with 2 inch cookie cutter or leave in a rectangle. Place parchment on a baking sheet. Bake 10-12 minutes for cookies and 15-18 minutes for bars in a preheated 350 degrees F (175 degrees C) oven or until edges begin to brown. Remove from sheet. Cool cookies on wire rack.
