Coffee Cookies

There is nothing like a fresh cup of coffee and a subtle sweet to ward off the mid afternoon doldrums.  This recipe does just that.

Preheat oven to 350 degrees F (175 degrees C). Line a cookie sheet with parchment. In a medium bowl, cream together the butter, sugars, coffee and Coffee & Chocolate Spice. Beat in the egg, flour and chopped nuts. Mix until well blended. Drop by teaspoonfuls onto cookie sheet. Bake for 10 to 12 minutes in the preheated oven, or until edges are golden. Let cool before enjoying.  Fantastic with coffee ice cream.
