Breakfast Polenta

Breakfast Polenta

  • 3 cups milk or Soy Milk
  • 3 cups water
  • 1 cup Maple Polenta Mix
  • 1/2 cup sour cream (optional)
  • 1 tsp Orange Vanilla Sugar (This is a sugar, sweetened with natural orange and vanilla flavors. A great substitute for extracts in baking.)
  • 6 tbsp blackberry jam (or your own favorite)
  • 1 cup walnuts and or pecans (or your own favorite)


In a medium pan over high heat, bring to boil milk and water. Reduce heat to simmer liquid. Stirring constantly, pour in Maple Polenta Mix in a thin, steady stream, breaking up any lumps that form. Simmer, stirring often, until polenta is soft and creamy, about 30 minutes. In a small bowl, mix sour cream and Orange Vanilla Sugar. Ladle polenta into bowls, and top with a dollop of sweetened sour cream, a 1 tbsp of jam, and 1/8 cup nuts.
