Tuna & Sweet Pea Salad
I love peas. Green, black eyed, you name it. This recipe makes the most of one of my favorite foods. Combined with tuna it is a meal packed with magnesium, iron, folate and protein. It is an easy way to a meal that is both simple and satisfying.

- 1 can Cento Tuna, packed in oil
- 1 cup blackeyed peas
- 1 cup frozen sweet peas
- 1 cup black olives
- 1 shredded carrot (optional)
- 2 tbsp Tomato & Parsley Vinaigrette mixed with
- 1/4 cup olive oil
1/4 cup Garlic Lover's Vinegar
In bowl, combine all ingredients (except baguette). Let sit at least 1 hour before serving. Serve over salad greens and baguette toast.
