Kale and Apples over polenta
This is comfort food on a dreary day. The heartiness of kale combined with the natural sweet succulence of apples soothes and satifies. The Locavore Deep Winter CSA from Red Fire Farm will keep your larder full nutritious greens and apples to make the most of the hearty recipes.
- 1 bunch kale, rib removed and chopped
- 2 tart apples, diced
- 1/2 onion, diced
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp lemon juice
- 1 tbsp apple cider
- ¼ cup diced fennel (optional)
- 2 tsp Garlic Ginger Salt
In a pot, saute onions and fennel in oil (about 5 minutes). Add kale, apples, lemon juice, and apple cider. Stir and cover until kale begins to wilt (about 3 minutes). Turn off the burner and toss with balsamic vinegar. This dish is delicious served on it's own or even better over polenta.
