Pekarski's Smoked Cornish Game Hen
Juicy, tender and full of fabulous flavor, smoked Cornish game hens are a treat that will leave you looking for more. Cooking these petite treats is easy. The recipe below comes from Pekarski Smoked Sausage Company in South Deerfield, MA.
Preheat oven to 325-350 degrees. In a casserole dish or roasting pan rest smoked hens in 1/2 inch of water. Bake the hens for 1 hour, adding more water to the pan as it evaporated. The hens are done when the temperature reaches 145 f.
Each hen makes one meal sized serving.
