Pancakes
I always forget how easy pancakes are to make, they are also crazily versatile. Toss in chocolate chips, pumpkin, apples, bananas or top with any manner of berries; pancakes have personality.
This is my go to recipe, and yes, I use a mix. Pancakes are also unpretentious and don't require a from scratch ceremony.
- 1 cup All Purpose Baking Mix (or your own favorite boxed mix like Jiffy)
- 1 cup Buttermilk
- 1 egg
- 1 tbsp vegetable oil
Cook by the tablespoon or ½ ladle on a medium hot greased griddle. When the batter is bubbled all over and brown underneath, flip until brown on the other side. Serve warm with butter and Maple syrup, sugar or Jam.This mix makes 18 silver dollar or ½ dozen standard sized pancakes.
