Mixed Fruit Power Bars
I adapted this recipe from one in Heidi Swanson's Super Natural Cooking. The bars are filling and full of satiating flavor. They make an energy filled breakfast on the go or mid afternoon snack to get you through the day.
- 2/3 cup Steele cut oats
- 1/3 cup raisins or Craisins/Dried Cranberries
- 1 1/2 cups water
- 1 bag of our gluten free Shortbread mix, or 2 cups of your own favorite recipe
- 1/3 cup ground flax seeds
- 2/3 cup
- Almond Flour
- 1/2 cup Desiccated Coconut
- 1/2 cup Hemp Seeds
- 2 over ripe mashed bananas or eggs, slightly beaten
- 1/2 cup Soy Cream
- 1 tbsp Cranberry Orange Vinegar
Preheat oven to 400 F. Grease a large cookie sheet. Soften oats and craisins in water, either in the microwave for 6 min or on the stove top. Mix together the dry ingredients. Set aside. Fold in bananas (or eggs), following with the cream and vinegar. Press the mixture in the pan. Cook for 30 to 35 minutes or until lightly brown. Let cool, remove from pan and cut into bars.
