Savory Cornbread Croutons

Simple Spoon Bread

1 package Basic Corn bread/muffin mix
2 slightly beaten eggs
8 oz cream style corn
1 cup whole frozen corn
1 cup sour cream or plain yogurt
½ cup butter, melted
1 cup shredded cheddar cheese

Combine eggs, basic corn muffin/bread mix, cream and whole corn, sour cream and butter. Spread in greased 9" pan. Bake at 350 degrees for 35 min. Sprinkle cheese on top and bake 10 to 15 min or until knife comes out clean.

I love spoon bread - only tried it for the first time in Gettysburg, PA. at the Farnsworth and had not known what the heck it was, as it was presented in what looked like an egg holder. This is a keeper - thanks!
