Baking Spice Blends: Russian Mulling Spice

 

Russian Mulling Spice


Originally meant for warm cider, tea, or wine, this blend is a terrific substitute for sugar while baking.  Dust apple slices with it and microwave a few short minutes for quick baked apples.

Ingredients:   Cinnamon, Nutmeg, Ginger, Coriander, and Special Pure Orange Extract (alcohol, water, & orange oil).

Sizes

Once upon a time, nestled along the banks of the Potomac in Virginia, there was the most wonderful Russian Restaurant.  It was complete with Samovar and your choice of 57 different Vodkas.  After dinner, if you were lucky, they would serve you Georgian tea, which was very sweet and orangy.  When we concocted our mulling spices, we thought of that tea.  Although, you are far from limited to using this only in tea.  We sprinkle it on apples, toast, warm cider, etc. It is also really wonderful with an orange spice tea.

 

Recipes for our Russian Mulling Spice.

WALDORF SALAD

  • ½ cup chopped apples         
  • ¼ cup diced celery
  • 1 tsp RUSSIAN MULLING SPICE    
  • ¼ cup walnuts
  • ¼ cup dried cherries       
  • ½ cup chopped pears
  • 2 tbsp mayo   
  • ¼ cup cheddar cheese,  shredded

Mix all ingredients and allow to sit at least ½ hour prior to serving. Garnish with fresh mint. Feel free to substitute cheese and cherries.

FOR DIP 

Mix

  • 1 tsp Russian Mulling Spice
  • 1/3 cup whipped cream or yogurt

Blend thoroughly.  Best when left to sit 1 hour before enjoying.
