Steamy hot summer nights are the perfect time to enjoy gazpacho. Delicious and healthy it is a meal in a bowl that can be made ahead for an easy weeknight meal. The dish originated in southern Spain and evolved to suit the flavors of many cultures. Today there are as many variations are there are recipes for spaghetti sauce. A local spin includes vegetables grown in our valley. One terrific recipe for this “Liquid Salad”comes from Red Fire Farm, where their award winning tomatoes steal the show.Along with Kale and organic goodness, Red Fire Farm is known for it’s tomatoes. For years Ryan Voiland has been winning awards for his night shade beauties. This past August they once again won first place at the 25th annual Massachusetts Tomato Festival for their cherry tomatoes. Each August the farm also holds a Tomato Festival, which includes 60 varieties of tomatoes. So they know a little about tomatoes and make one heck of a simple and delicious gazpacho.
