Old Favorites For Baking: Double Chocolate Brownies
My friend Thomas used to come from Sweden every summer to play hockey. Among the assortment of Swedish delicacies he would bring with him were his mother's brownies. I almost looked forward to the brownies coming more than the arrival of Thomas himself. Eventually we persuaded his mother to share the recipe and now we have them whenever we need a little pick me up. Rich and decadent, they make me feel like a winner off the ice as well as on.
Preheat oven to 350f. In a mixing bowl combine the contents of the inner bag with

1/8 cup water
- 2/3 cup butter (or vegetable oil for more heart-healthy brownies)
- 1 egg
Mix well and add the chocolate chips. Pour the batter into a greased 8x8 pan. The brownies should cook for about 30 to 35 minutes or until a cake tester inserted 1 inch from the side of the pan comes out clean.
Add 1/4 cup instant coffee granules and 1/2 cup white chocolate chips for cappuccino brownies.

Ingredients: Corn, Arrowroot and Rice Flours, Cocoa, Cane Sugar, Chocolate Chips (sugar, chocolate liquor, cocoa butter, dextrose, soya lecithin), cinnamon, nutmeg, orange extract (alcohol, water and pure orange oil) vanilla extract (water, vanilla, propylene glycol, caramel color) and kosher salt.
