Shrimp and Black Bean Salad
This is a simple and satisfying salad. Fresh flavors to please the palate all year long and a sensational recipe to have in the fridge on a hot and busy summer night.
- 1 pound shrimp
- 2 cups of black beans
- 2 cups of corn kernels
- 2 large diced tomatoes
- 1/2 cup chopped scallions
- 1 large avocado diced
- 1 cup of shredded carrots
- 1 tsp Picante Passion
- 1/3 cup Margarita Dressing
Spray a saute pan with vegetable or olive oil cooking spray, and saute shrimp which has been tossed in Picante Passion. When the shrimp is cooked mix it in with a salad of black beans, corn, tomatoes, onion, chopped scallions, avocado and shredded carrots. Let marinate in the dressing for at least 1 hour, overnight is even better. Serve in margarita glasses, rims dipped in kosher salt. Top with a wedge of lime.
