Buttermilk
Buttermilk is curdled milk that has soured and is starting to congeal. It is prized in baking and is becoming know as a fantastic marinade to tenderize poultry.
If you don't have curdled milk on hand add 1 tbsp lemon juice or vinegar to 1 cup milk. Let sit for at least 5 minutes.
