Winter recipes: broiled white fish with ruttabaga and turnip slaw

 

A healthy fish, barramundi is a lean protein, high in omega 3's and virtually devoid of saturated fat.  It has been touted for it's health benefits. It has a mild flavor that is both flavorful on it's own or adorned with a special sauce. The ruttabaga and turnip slaw are a fresh pairing with the buttery flavor of this fantastic fish.

 

  • 2 tbsp butter
  • 1 tbsp Tomato & Parsley Vinaigrette
  • 2 fresh lemons
  • Salt to taste
  • 4 Barramundi fillets
  • 1 recipe Ruttabaga and Turnip Slaw
  • Salt & Pepper to taste

 

Rinse off lemons and grate the rind from one.  Microwave for 1 minute. In a small covered bowl melt the butter with vinaigrette mixture for 2 minutes.

 

Apply a light coat of olive oil  to a casserole dish.  Lay the fillets it.  Cut the lemon you grated the rind from  in half, remove any obvious seeds and drizzle juice over the fish.  Pour butter mixture over the fish in an even stream. Place the pan under the preheated broiler and cook for 5 to 7 minutes. Watch them carefully. Fish will be cooked when opaque and easily flaked with a fork.

 

Serve with slices of fresh lemon over a bed of Ruttabaga and Turnip Slaw.
