Lime Curd

Lime curd
 

6 limes        
3/4 cup sugar           
½ tsp Orange Vanilla Sugar
4 eggs well beaten
2 tbsp olive oil

Wash limes and zest the rind of 2. Beat the zest into eggs in a glass bowl.  Warm the limes in the microwave for 1 min, this helps to yield more juice.  Squeeze as much juice as you can from each lime.  Mix  the juice, vinegar, sugars & oil with eggs. Microwave for 8-13 min.  Whisk well every 2 mins. to ensure even thickening.  Let stand 5 mins, whisking once or twice. The Lime Curd thickens as it cools.

Tough, stubborn, irascible, big hearted, lover of life, man with a never ending smile; that is my father.  I wish I could bottle his energy.  He created a life full of adventure and inspired us to work hard and achieve our dreams.  He taught us to embrace our passions, in doing so he has given us the world.

For father's day he never wants anything and would surely cherish a gift of soap on a rope. If we can get him to stop for a meal this father's day, here's what will be on the menu.
