Lime Tarts


1 Package Basic Shortbread Mix (Gluten Free, you would never know)
3/4 cup butter or vegetable based margarine
1 tbsp cold water
1 prepared recipe of Lime Curd

Add all ingredients to a bowl.  Combine using a pastry cutter.  When the mix looks like rice, form a ball. Refrigerate the mix for at least 1 hour.  Preheat oven to 375 f.  Grease 18 muffin tins.  Press dough into each tin.  Cook tart shells for 10 minutes.  Remove from oven.  Evenly distribute one recipe of Lime Curd over the 18 shells, keeping them in the muffin tins.  Return to the oven for another 15 minutes.

Garnish with toasted coconut and blueberries.
