Corn & Tomato Fritters


1 Package Mexicali Corn Bread
2 Cups Chopped Fresh Tomatoes,strained

2 Cups Corn Kernels, Cooked
1 large carrot Grated
2 Eggs, whisked

Preheat oven to 400.
Mix all ingredients.
Grease 2 Lasagna Pans.
Drop in 1/8 or 1/4 cupfuls of the mix onto each pan.
Bake for 10 minutes, remove from oven and flip each fritter.
Return pans to the oven, rotating the top and bottom pans.
Bake for another 10 minutes.
Serve as a side dish or with sour cream as an appetizer.

Uses for Nasturtium Vinegar


 Nasturtium Vinaigrette
3 tbsp olive oil
2 tbsp Nasturtium Vinegar
½ tbsp Dijon mustard
a pinch of sugar
salt and pepper

Whisk with a fork until emulsified.

Deviled Eggs
6 hard-cooked eggs, peeled and cut lengthwise
¼ cup Light Mayonnaise or Salad Dressing
½ tsp Dijon Mustard
½ tsp Nasturtium Vinegar
1/4 tsp Bayou Blackening Balm - More for garnish

Pop out (remove) the egg yolks to a small bowl and mash with a fork. Add mayonnaise, mustard,  vinegar, Bayou Blackening Balm  and mix thoroughly. Fill the empty egg white shells with the mixture and sprinkle lightly with Bayou Blackening Balm.

Cover lightly with plastic wrap and refrigerate for at least 1 hour and up to one day before serving.

Beef Brisket Marinade
(enough for 12 servings of meat)
1 1/2 cups vegetable oil   
3/4 cup soy sauce
1/2 cup Nasturtium Vinegar   
1/3 cup lemon juice
1/4 cup Worcestershire sauce   
2 tbsp stoneground mustard
2 1/4 tsp salt       
4 tbsp Chinese 5 Spice

Combine ingredients. Put meat in a large bowl. Pour marinade over meat and let stand covered 3 days in refrigerator, basting every day.
