Corn & Tomato Fritters
1 Package Mexicali Corn Bread
2 Cups Chopped Fresh Tomatoes,strained
2 Cups Corn Kernels, Cooked
1 large carrot Grated
2 Eggs, whisked
Preheat oven to 400.
Mix all ingredients.
Grease 2 Lasagna Pans.
Drop in 1/8 or 1/4 cupfuls of the mix onto each pan.
Bake for 10 minutes, remove from oven and flip each fritter.
Return pans to the oven, rotating the top and bottom pans.
Bake for another 10 minutes.
Serve as a side dish or with sour cream as an appetizer.
