Salata Therini - Greek Summer Salad

Salata Therini - Greek Summer Salad
When the days are hot, steamy and sultry this recipe fills the bill.

  • 3 Tomatoes, Cut in wedges
  • 1 sliced Cucumber
  • 1 Sliced Red Onion
  • 2 Green Peppers, Chopped
  • 1 tbsp Olio do Panne
  • 6 tbsp good quality Greek Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 1/3 lb. Feta Cheese (if you are local, get it direct from Sweet Pea in Granby, CT)
  • 2 Dozen Black Kalamata Olives
  • salt & pepper to taste

  Place the tomatoes, cucumber, onion and peppers in a large salad bowl. Shake together the olive oil, vinegar, and Olio do Panne spice blend. Pour the dressing over the salad. Top with feta cheese and the olives. Sprinkle with salt and pepper to taste.
